Americans are not allergic to letters. The different spellings all come from man named John Webster, or Webster's dictionary. After the American revolution, there was a conscious effort to distance themselves from their English cultural background. Webster took the dictionary and re-spelled every word to Americanize the language. While most changes didn't stick, some changes like "color" or "spelled" did survive to make American spelling.
