Hansels are a build that contains at most 20% troops of the spies. So if you have 5m spy attack and defense, the most you can have is 1m attack and defense before the mechs change on you to a hybrid.
hansels are a type of build with 25% or less attack buildings the rest is spy buildings such as guilds sos volaries ect. the best one depends on what you plan on doing war such as ee is sos hansel eb just go to highest tier upgrading as you can but only hansel you can be is a guild hansel until you get all lowlands explored
If you go attack build for EBs only, don't do any towers. They reduce/curve your plunder. I don't know what the hell they do. I've gotten so many different answers on them.

Just to add a little more to op's question. Being a hansel is about taking advantage of a game mechanic. Having less than 25% attack troop builds on your land while the rest are spy building (not going into towers at the moment) will give you the means to use the hansel mechanics. This allows you, while having zero gold out, to be dtw to attack builds. Not other hansels or hybrids, only dtw to attack builds.
